Greetings! Is everyone looking forward to Thanksgiving? I know we are.....it happens to be one of my very favorite holidays. Family...Food...& Football!!
For a lot of folks though, eating with family and friends gathered around the table, sharing fresh home cooked meals seems to be a part of the past. With our lives becoming more hectic each year it seems to be the one thing we give up first. I am happy to say, that it really doesn't have to be that way. With planning ahead, definitely a crockpot at times and receiving our CSA boxes each week, you can make it happen! Also, with the internet and certain apps on your phone, you can put your ingredients in and pop up new recipes in an instant. Put the cell phones away after that....lol....and show your thankfulness by sharing quality time "together" enjoying good food prepared with love.
This week's boxes will contain green beans and non-gmo organic sweet corn from Florida. These two items which are popular and in demand are good but sad to say not as fresh as I had hoped they would be. But, I made the decision to add them anyways due to all who have been asking for them. I must say they did past the taste test! I thought they would be a great change and good items for this week. McClellan Organics are supplying fresh from their farm greens (collards, swiss chard and kale) bell peppers, yellow squash and eggplant. We also have onions, apples and potatoes. This week I am sharing my favorite way I prepare my green beans. (This is what I made last night for the taste test with the green beans and yes I ate the whole thing!) I steam my first, but not all the way. Then in a non-stick skillet I drizzle a little olive oil or coconut oil. Add the beans and saute on med high. If you have a lot beans or want to speed up the process you may put a lid on. After the beans have started to brown a little add a clove or two of fresh crushed garlic and a 1/4 cup of sliced almonds ( or any of your favorite nut: walnuts, pecans, or my favorite pine nuts or pignoli!!) I season with salt and pepper and sprinkle a little sugar to help caramelize. You may even add a sliced sweet onion in as well. But it is simple and delicious! Enjoy!!!
